  • 1 cup unsalted butter melted, cooled
  • 1.25 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 1 large egg room temperature preferred
  • 1 egg yolk room temperature preferred
  • 1.5 teaspoon vanilla extract
  • 2.75 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 0.75 teaspoon salt
  • 1.75 cups semisweet chocolate chips plus extra for topping

Method
 

  1. Combine melted butter and both sugars. Stir until smooth.
  2. Add egg, egg yolk, and vanilla extract. Mix until combined.
  3. Whisk together flour, cornstarch, baking soda, and salt.
  4. Gradually add dry ingredients to wet, stirring until incorporated.
  5. Stir in chocolate chips.
  6. Cover and refrigerate for at least 30 minutes.
  7. Preheat oven to 350°F (177°C). Line baking sheet.
  8. Scoop tablespoon-sized portions onto sheet, spacing 2 inches apart.
  9. Bake for 11 minutes or until edges are golden.
  10. Cool on sheet before transferring to a wire rack.

Notes

For extra chewy cookies, chill the dough for longer!
