Ingredients
  

Canned Goods
  • 1 can chickpeas
  • 1 can navy beans
Vegetables & Fruits
  • 1/2 cup kalamata olives pitted
  • 1 piece cucumber
  • 1 piece red onion
  • 1 piece bell pepper
  • 1/2 cup vegan feta cheese
Dressing & Oils
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons maple syrup
  • 1 piece lemon juice
Optional
  • 1 piece avocado optional
  • 1 cup cherry tomatoes optional
  • 1/2 cup deli meats or grilled chicken optional
  • 1/2 cup mozzarella pearls optional

Method
 

  1. Chop red onion, bell peppers, and cucumber; slice olives.
  2. Drain and rinse chickpeas and navy beans.
  3. Combine all ingredients in a large bowl.
  4. Whisk olive oil, maple syrup, and lemon juice for dressing.
  5. Toss salad with dressing and serve immediately or store.

Notes

For extra flavor, let the salad sit for 10 minutes before serving.
