  • 1 cup mashed ripe bananas about 2-3 bananas
  • 1 cup pumpkin puree
  • 1/2 cup maple syrup or agave syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 1/2 cups gluten-free all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. Mix mashed bananas, pumpkin, syrup, coconut oil, and vanilla until smooth.
  3. Whisk dry ingredients together, then combine with wet ingredients.
  4. Fold in nuts if using, pour into pan, and smooth the top.
  5. Bake for 50-60 minutes until a toothpick comes out clean. Cool before slicing.

This bread is perfect for a healthy snack or breakfast. Feel free to add more nuts for extra crunch.
