Ingredients
  

Meat
  • 1 pound mild Italian sausage
Vegetables
  • 1.5 cups diced yellow onion
  • 3 ribs celery diced
  • 2 large carrots sliced into rounds
Garlic
  • 2 teaspoons minced garlic
  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon crushed red pepper
  • 0.5 teaspoon ground black pepper
Broth & Beans
  • 4 cups chicken broth
  • 2 cans Great Northern beans drained and rinsed
Greens & Dairy
  • 2 cups fresh baby spinach
  • 0.5 cup heavy whipping cream
Garnish
  • to taste chopped parsley for garnish

Method
 

  1. Cook sausage in a Dutch oven until browned, breaking it up, about 10-15 minutes.
  2. Add onions, celery, and carrots; cook until softened, 3-5 minutes. Add garlic and cook 1 minute.
  3. Stir in tomato paste, Italian seasoning, red pepper, and black pepper. Add broth and beans; simmer 6-7 minutes.
  4. Stir in cream and spinach; cook until spinach wilts, about 5 minutes. Serve garnished with parsley.

Notes

For a vegetarian version, omit sausage and add more beans or vegetables.
