Cookie Ingredients
  • 1 cup unsalted butter 2 sticks
  • 0.75 cup white sugar
  • 0.75 cup dark brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 3 cups quick-cook oats
  • 1.5 cups all purpose flour
  • 3.4 oz instant vanilla pudding package
  • 1 tsp baking soda
  • 1 tsp salt
  • 12 oz semi-sweet chocolate chips package

Method
 

  1. Preheat oven to 375 and line a baking sheet.
  2. Beat butter, white sugar, and brown sugar together.
  3. Add eggs and vanilla extract and beat until fluffy.
  4. Combine flour, oats, vanilla pudding, salt, and baking soda in a separate bowl.
  5. Slowly add dry ingredients to wet ingredients in thirds, stirring after each addition.
  6. Add chocolate chips and mix until just combined.
  7. Scoop out golfball sized dollops onto baking sheet.
  8. Bake at 375 for 11-12 minutes.
  9. Leave cookies on baking sheet for 5 minutes, then transfer to a cooling rack for 10 minutes.
  10. Enjoy!

Notes

For a chewier cookie, chill the dough for 30 minutes before baking.
