Wet Ingredients
  • 3 pieces ripe bananas, mashed about 1 1/2 cups
  • 2/3 cup canned pumpkin
  • 1 large egg at room temperature
  • 5 tbsp melted butter, cooled
  • 1/3 cup packed brown sugar
Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp sea salt
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp pure vanilla extract
  • 1/2 to 1 tsp pumpkin pie spice, optional
  • 1 cup dark chocolate chips, divided 3/4 cup for batter, 1/4 cup for topping

Method
 

  1. Preheat oven to 350°F (175°C). Grease or line a bread pan.
  2. Mash bananas, whisk in egg, then add cooled melted butter, vanilla, pumpkin, and sugar. Mix until smooth.
  3. Whisk dry ingredients together, then fold into wet mixture. Gently mix in 3/4 cup chocolate chips.
  4. Pour batter into prepared pan, sprinkle remaining chips on top.
  5. Bake for 50-60 minutes until a toothpick comes out clean. Cool before slicing.
