Ingredients
  

Butter
  • 0.75 cup unsalted butter melted and browned
  • 1 cup light brown sugar
  • 0.25 cup white sugar
  • 1 large egg yolk room temperature
  • 2 teaspoons vanilla extract
  • 1 tablespoon maple syrup
  • 0.25 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1.5 teaspoons ground cinnamon
  • 2 cups all purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon kosher salt
  • 0.5 cup white sugar
  • 0.5 tablespoon pumpkin pie spice

Method
 

  1. Melt and brown the butter, then cool.
  2. Mix in sugars and maple syrup.
  3. Add egg yolk, vanilla, and pumpkin; whisk smooth.
  4. Combine dry ingredients; fold into wet to form dough. Chill 30 mins.
  5. Preheat oven to 350°F/175°C. Scoop dough, roll in sugar-spice mixture, and place on baking sheets.
  6. Bake for 10-14 minutes until edges are set.

Notes

Chill the dough for best texture and flavor.
