  • 2 cups Chopped Broccoli Florets Fresh and firm broccoli.
  • 1 cup Shredded Cheddar Cheese Sharp cheddar preferred for melting.
  • 1 medium Onion Finely chopped for flavor.
  • 4 cups Vegetable Broth Low-sodium recommended.
  • 1 cup Heavy Cream For creaminess.

Method
 

  1. Chop broccoli into bite-sized florets and finely chop the onion.
  2. In a large pot, heat olive oil over medium heat. Sauté onion for 3-5 minutes until translucent.
  3. Add broccoli and sauté for 2-3 minutes.
  4. Pour in vegetable broth, bring to a boil, then simmer for 10-15 minutes until tender.
  5. Puree the soup with an immersion blender, then stir in heavy cream and melted cheese. Season and serve hot.

Notes

For a thicker soup, blend longer or add a bit of flour.
