Method
- Chop broccoli into bite-sized florets and finely chop the onion.
- In a large pot, heat olive oil over medium heat. Sauté onion for 3-5 minutes until translucent.
- Add broccoli and sauté for 2-3 minutes.
- Pour in vegetable broth, bring to a boil, then simmer for 10-15 minutes until tender.
- Puree the soup with an immersion blender, then stir in heavy cream and melted cheese. Season and serve hot.
Notes
For a thicker soup, blend longer or add a bit of flour.
