Ingredients
  

Dough
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup cold unsalted butter, cubed
  • 3-4 tablespoons ice water
Filling
  • 1 medium sweet potato, peeled and thinly sliced
  • 1 tablespoon fresh sage, chopped or 1 teaspoon dried sage
  • 1/2 cup grated cheese (such as gruyère or feta)
  • 1 egg beaten (for egg wash)
  • to taste none freshly ground black pepper

Method
 

  1. Preheat oven to 400°F (200°C). Prepare baking sheet with parchment.
  2. Mix flour and salt; cut in butter until coarse. Add ice water gradually, form dough, chill 30 mins.
  3. Roll dough into 12-inch circle, transfer to baking sheet. Toss sweet potatoes with sage, salt, pepper.
  4. Arrange sweet potatoes in center, sprinkle cheese, fold edges over, pleat for rustic look.
  5. Brush crust with egg wash, bake 30-35 mins until golden and tender. Cool slightly before serving.

Notes

Chill the dough well for easier handling and a flaky crust.
