Method
- Preheat oven to 400°F (200°C). Prepare baking sheet with parchment.
- Mix flour and salt; cut in butter until coarse. Add ice water gradually, form dough, chill 30 mins.
- Roll dough into 12-inch circle, transfer to baking sheet. Toss sweet potatoes with sage, salt, pepper.
- Arrange sweet potatoes in center, sprinkle cheese, fold edges over, pleat for rustic look.
- Brush crust with egg wash, bake 30-35 mins until golden and tender. Cool slightly before serving.
Notes
Chill the dough well for easier handling and a flaky crust.
