Ingredients
  

Bananas and Pumpkin
  • 2 pieces ripe bananas
  • 1/2 cup packed dark brown sugar
  • 3/4 cup white sugar
  • 1 cup pumpkin puree
  • 1 large egg at room temperature
  • 6 tbsp melted unsalted butter
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
Cream Cheese Filling
  • 8 oz softened cream cheese
  • 1/2 cup white sugar
  • 1 large egg at room temperature
  • 2 tsp vanilla extract
  • 3 tbsp all-purpose flour
Cinnamon Crumb Topping
  • 1 cup all-purpose flour
  • 1/2 cup packed dark brown sugar
  • 1 tsp ground cinnamon
  • 6 tbsp melted unsalted butter

Method
 

  1. Preheat oven to 350°F (177°C). Line muffin pans with liners.
  2. Mix mashed bananas, sugars, pumpkin, egg, butter, and vanilla. Add dry ingredients and combine.
  3. Beat cream cheese with sugar, egg, vanilla, and flour until smooth. Set aside.
  4. Prepare crumb topping by mixing flour, sugar, cinnamon, and butter until crumbly.
  5. Fill muffin liners with batter, add cream cheese, top with more batter, and sprinkle crumb topping. Bake at 350°F for 20-35 minutes until golden and cooked through.

Notes

Let muffins cool for 15 minutes before serving for best flavor.
