Method
- Preheat oven to 400°.
- Place rhubarb in pie shell.
- Whisk remaining ingredients, pour over rhubarb.
- Bake 10 min at 400°, reduce to 350°, bake 40 min.
- Cool completely before serving.
Notes
For a crispier crust, blind bake the pie shell for 10 minutes before adding the filling.
