Ingredients
  

Pie
  • 1 unbaked pie shell
Filling
  • 3 c. chopped rhubarb
  • 1 1/4 c. granulated sugar
  • 3 eggs beaten
  • 1 c. heavy whipping cream
  • 3 Tbsp. flour
  • 1/2 tsp. salt

Method
 

  1. Preheat oven to 400°.
  2. Place rhubarb in pie shell.
  3. Whisk remaining ingredients, pour over rhubarb.
  4. Bake 10 min at 400°, reduce to 350°, bake 40 min.
  5. Cool completely before serving.

Notes

For a crispier crust, blind bake the pie shell for 10 minutes before adding the filling.
