Method
- Preheat oven to 350°F (175°C). Line baking sheet.
- Cream butter, sugars until fluffy. Mix in pumpkin, yolk, vanilla.
- Whisk dry ingredients; gradually add to wet, mix until combined.
- Form 1.5 tbsp balls, roll in sugar, place on sheet.
- Bake 10-12 mins; cool on sheet 5 mins, then wire rack.
Notes
Chill dough if too soft for easier handling.
