Ingredients
  

Dough
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup canned pumpkin puree
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 cup granulated sugar (for rolling)

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheet.
  2. Cream butter, sugars until fluffy. Mix in pumpkin, yolk, vanilla.
  3. Whisk dry ingredients; gradually add to wet, mix until combined.
  4. Form 1.5 tbsp balls, roll in sugar, place on sheet.
  5. Bake 10-12 mins; cool on sheet 5 mins, then wire rack.

Notes

Chill dough if too soft for easier handling.
