  • 0.5 cup all-purpose flour
  • 6 tbsp brown sugar
  • 0.5 tsp cinnamon
  • 0.25 tsp kosher salt
  • 57 g unsalted butter, melted
Pumpkin Bread Batter
  • 15 oz can pumpkin puree
  • 150 g vegetable oil
  • 213 g light brown sugar
  • 100 g granulated sugar
  • 100 g large eggs
  • 1.5 tsp baking powder
  • 0.75 tsp baking soda
  • 0.75 tsp kosher salt
  • 5 tsp cinnamon
  • 0.5 tsp grated nutmeg
  • 0.25 tsp ground ginger
  • pinch ground cloves
  • 2 cups all-purpose flour

Method
 

  1. Whisk flour, sugars, cinnamon, and salt; stir in melted butter. Chill.
  2. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  3. Mix pumpkin, oil, sugars, and eggs until smooth.
  4. Stir in baking powder, baking soda, salt, and spices; fold in flour.
  5. Pour batter into pan, sprinkle streusel on top, and bake for 65–80 minutes. Cool before slicing.
