Ingredients
  

Pumpkin Filling
  • 1 cup pumpkin puree
  • 2 eggs eggs
  • 1/2 cup heavy cream
  • 1 teaspoon pumpkin spice
  • 1/4 cup brown sugar
Tart Shells & Caramel
  • Premade tart shells or homemade pastry Use premade or homemade pastry
  • about 1 tablespoon caramel sauce per tart shell

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Prepare tart shells: place premade shells on a baking sheet or line homemade pastry in tart pans.
  3. Whisk pumpkin puree, eggs, cream, pumpkin spice, and sugar to make filling.
  4. Spoon caramel into each shell, then pour pumpkin filling over it.
  5. Bake for 20-25 minutes until set; cool before serving. Optional: drizzle extra caramel and sprinkle pumpkin spice.

Notes

For a richer flavor, chill the tarts before serving.
