Method
- Preheat oven to 350°F (175°C).
- Prepare tart shells: place premade shells on a baking sheet or line homemade pastry in tart pans.
- Whisk pumpkin puree, eggs, cream, pumpkin spice, and sugar to make filling.
- Spoon caramel into each shell, then pour pumpkin filling over it.
- Bake for 20-25 minutes until set; cool before serving. Optional: drizzle extra caramel and sprinkle pumpkin spice.
Notes
For a richer flavor, chill the tarts before serving.
