Dough
  • 2 cups all-purpose flour
  • 1 cup pumpkin puree
  • 1 cup sourdough starter (active and bubbly)
  • 1/2 cup warm water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 tablespoon olive oil

Method
 

  1. Mix pumpkin, sourdough starter, water, and sugar until blended.
  2. Whisk together flour, salt, cinnamon, nutmeg, and ginger.
  3. Add dry ingredients to wet mixture; stir to form shaggy dough.
  4. Knead dough on floured surface for 5-7 minutes until smooth.
  5. Let dough rise in a warm place for 4-6 hours until doubled.
  6. Shape into a loaf, place on parchment, and bake at 450°F (230°C) for 30-35 minutes.

Notes

For a crustier loaf, preheat a Dutch oven in the oven before baking.
