Method
- Mix pumpkin, sourdough starter, water, and sugar until blended.
- Whisk together flour, salt, cinnamon, nutmeg, and ginger.
- Add dry ingredients to wet mixture; stir to form shaggy dough.
- Knead dough on floured surface for 5-7 minutes until smooth.
- Let dough rise in a warm place for 4-6 hours until doubled.
- Shape into a loaf, place on parchment, and bake at 450°F (230°C) for 30-35 minutes.
Notes
For a crustier loaf, preheat a Dutch oven in the oven before baking.
