Ingredients
  

Dough
  • 1 cup pumpkin puree
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar (for coating)
  • 1 tablespoon cinnamon (for coating)

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheet.
  2. Cream butter, sugars until fluffy; add pumpkin and egg, mix well.
  3. Mix dry ingredients; gradually add to wet, combine.
  4. Combine sugar and cinnamon for coating; roll dough into balls, coat.
  5. Place on sheet, bake 10-12 mins; cool before serving.
