Ingredients
  

Pumpkin Puree
  • 15 ounces pumpkin puree
Butter
  • 1/2 cup salted butter, melted
Sugars
  • 3/4 cup light brown sugar, packed
  • 3/4 cup granulated sugar
Eggs
  • 2 units eggs
Vanilla Extract
  • 1 teaspoon pure vanilla extract
Flour and Spices
  • 1 3/4 cups all-purpose flour
  • 1 tablespoon pumpkin pie spice
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 1/2 teaspoon fine sea salt
Mix-ins (optional)
  • 1 cup mix-ins (chocolate chips, nuts, dried fruit) optional

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin pan.
  2. Mix dry ingredients: flour, spices, baking powder, salt.
  3. Whisk pumpkin, melted butter, sugars, eggs, and vanilla until smooth.
  4. Combine wet and dry ingredients; fold in mix-ins if desired.
  5. Spoon batter into muffin cups; bake 20–25 minutes until a toothpick comes out clean.
  6. Cool muffins in pan 10 minutes, then transfer to wire rack to cool completely.

Notes

For extra flavor, add a sprinkle of cinnamon on top before baking.
