Method
- Preheat oven to 375°F (190°C). Grease a 12-cup muffin pan.
- Mix dry ingredients: flour, spices, baking powder, salt.
- Whisk pumpkin, melted butter, sugars, eggs, and vanilla until smooth.
- Combine wet and dry ingredients; fold in mix-ins if desired.
- Spoon batter into muffin cups; bake 20–25 minutes until a toothpick comes out clean.
- Cool muffins in pan 10 minutes, then transfer to wire rack to cool completely.
Notes
For extra flavor, add a sprinkle of cinnamon on top before baking.
