  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup granulated sugar
  • 4 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 egg yolk egg yolk
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mix dry ingredients in a large bowl and whisk wet ingredients in a separate bowl.
  3. Combine wet and dry ingredients gently, then pour batter into pan.
  4. Prepare cream cheese mixture and drop in dollops on batter, then swirl with a knife.
  5. Bake for 60-65 minutes, cool before slicing.
