Method
- Preheat oven to 400°F (200°C).
- Scrub potatoes and pierce with a fork.
- Rub potatoes with olive oil, salt, and pepper.
- Bake for 45-60 minutes, or until soft.
- Let potatoes cool slightly.
- Cut potatoes in half and scoop out flesh.
- Brush inside of skins with oil and sprinkle with salt and pepper.
- Bake for another 10-15 minutes, or until crispy.
- Top with cheddar cheese and turkey bacon.
- Bake for 5 minutes, or until cheese is melted.
- Serve with sour cream and green onions.
Notes
For extra flavor, try adding garlic powder or paprika to the potato skins before baking.
