Potato Skins

Crispy potato skins loaded with cheddar cheese and turkey bacon, perfect as an appetizer or snack. Serve with sour cream and green onions for a delicious treat.

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 0.5 cup cooked turkey bacon, crumbled
  • 0.25 cup sour cream
  • 2 tablespoons chopped green onions

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Scrub potatoes and pierce with a fork.
  3. Rub potatoes with olive oil, salt, and pepper.
  4. Bake for 45-60 minutes, or until soft.
  5. Let potatoes cool slightly.
  6. Cut potatoes in half and scoop out flesh.
  7. Brush inside of skins with oil and sprinkle with salt and pepper.
  8. Bake for another 10-15 minutes, or until crispy.
  9. Top with cheddar cheese and turkey bacon.
  10. Bake for 5 minutes, or until cheese is melted.
  11. Serve with sour cream and green onions.

Notes

For extra flavor, try adding garlic powder or paprika to the potato skins before baking.
