Ingredients
  

Pumpkin and Cream Cheese Layer
  • 1 cup pumpkin puree
  • 1/2 cup cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
Wet Ingredients
  • 2 eggs eggs
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix pumpkin, eggs, oil, vanilla, and sugars until smooth.
  3. Whisk dry ingredients together.
  4. Combine wet and dry; set aside.
  5. Beat cream cheese until smooth. Pour half batter into pan, add cream cheese, then remaining batter. Swirl gently.
  6. Bake 50-60 minutes; cool before serving.

Notes

For best results, use room temperature ingredients and do not overmix.
