  • 3 pieces ripe bananas, mashed
  • 1 cup Greek yogurt
  • 1/2 cup sugar
  • 1/4 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas, Greek yogurt, sugar, honey, eggs, and vanilla until combined.
  3. Whisk together baking soda, baking powder, salt, flour, and cinnamon.
  4. Gradually add dry ingredients to wet, stirring until just combined. Fold in nuts or chips if desired.
  5. Pour batter into pan, bake for 50-60 minutes, cool before slicing.

Notes

For extra flavor, add a dash of cinnamon or top with nuts before baking.
