Method
- Preheat oven to 350°F (175°C). Grease a loaf pan and line with parchment paper.
- Mash bananas until smooth. In a bowl, combine cake mix, eggs, oil, and vanilla. Mix until just combined.
- Pour batter into prepared pan. Smooth the top.
- Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For added flavor, sprinkle chopped nuts on top before baking.
