  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves

  • optional additional thyme sprigs for garnish

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Mix honey, balsamic, olive oil, thyme, salt, and pepper in a bowl.
  3. Toss carrots in the mixture and spread on a baking sheet.
  4. Roast for 25-30 minutes until tender and caramelized.
  5. Garnish with thyme sprigs and serve.

Notes

Use fresh thyme for the best flavor and adjust salt and pepper to taste.
