Method
- Melt butter in a large pot over medium heat. Add onion, carrot, and celery; cook for 10 minutes.
- Add garlic, cook for 1 minute. Stir in paprika and flour; cook for 1 minute.
- Add broth and broccoli; simmer for 8-9 minutes until tender.
- Stir in milk, then add blended cottage cheese and shredded cheese; stir until melted. Blend a cup of soup until smooth and return to pot.
- Add salt and pepper to taste. Serve warm.
Notes
Use an immersion blender for easier blending or be cautious with steam when using a regular blender.
