Ingredients
  

Dry ingredients
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
Wet ingredients
  • 1 cup canned pumpkin puree
  • 1/2 cup Greek yogurt
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
Optional mix-ins
  • 1/2 cup chopped walnuts or pecans optional
  • 1/2 cup chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C) and prepare muffin tin.
  2. Mix dry ingredients in a bowl.
  3. Combine wet ingredients in another bowl until smooth.
  4. Gradually add wet to dry, stirring gently. Fold in nuts and chocolate chips if using.
  5. Fill muffin cups 3/4 full and bake for 18-20 minutes. Cool before serving.

Notes

Store muffins in an airtight container for up to 3 days or freeze for longer storage.
