Ingredients
  

Fruits
  • 2 pieces ripe bananas, mashed
Dry ingredients
  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
Wet ingredients
  • 1/2 cup milk (or non-dairy alternative)
  • 1 teaspoon vanilla extract
Optional mix-ins
  • 1/2 cup chopped nuts or chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix mashed bananas, applesauce, honey, milk, and vanilla.
  3. Combine dry ingredients and add to wet mixture; stir until just combined.
  4. Fold in nuts or chocolate chips if using.
  5. Spoon batter into muffin tin and bake 18-20 minutes.
  6. Cool muffins before serving.

Notes

For added flavor, sprinkle with a little cinnamon before baking.
