Ingredients
  

Bananas
  • 3 pieces ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1.5 cups whole wheat flour
  • 1/2 cup dark chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas with melted coconut oil, honey, eggs, and vanilla.
  3. Stir in baking soda, salt, cinnamon, then fold in flour and chocolate chips.
  4. Pour batter into pan and bake for 50-60 minutes until a toothpick comes out clean.
  5. Cool in pan for 10 minutes, then transfer to wire rack to cool completely.

Notes

For added flavor, sprinkle with nuts or extra chocolate chips before baking.
