Ingredients
  

Cake Mix
  • 1 recipe Copycat Betty Crocker Gluten Free Yellow Cake Mix
  • 1 cup very ripe mashed bananas about 2 medium bananas
  • 0.5 cup unsalted butter, softened
  • 1 Tablespoon unsalted butter, softened
  • 3 large eggs
  • 0.5 cup chopped nuts optional

Method
 

  1. Preheat oven to 350°F (175°C). Oil a 9x5-inch loaf pan.
  2. Add bananas and butter to mixer; beat until blended.
  3. Add eggs and beat until creamy.
  4. Add cake mix and beat just until blended.
  5. Pour batter into pan; bake for 55-60 minutes until a toothpick comes out clean. Cover with foil if browning too quickly.
  6. Cool in pan for 10 minutes, then transfer to a rack to cool completely before slicing.

Notes

For added flavor, fold in chopped nuts before baking.
