Ingredients
  

Bananas
  • 3 pieces ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups gluten-free flour blend
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mash bananas, then stir in melted coconut oil.
  3. Add sugar, egg, vanilla, baking soda, and salt; mix well.
  4. Stir in gluten-free flour and cinnamon; fold in nuts or chocolate chips if desired.
  5. Pour batter into pan, bake 50-60 minutes, cool before serving.

Notes

Use ripe bananas for best flavor and sweetness.
