This gluten-free banana bread is quick to make and perfect for a moist, flavorful treat using a Betty Crocker cake mix.

Ingredients
  

butter or margarine
  • 1/2 cup butter or margarine, softened (1 stick)
bananas
  • 1 cup mashed ripe bananas (2-3 bananas)
eggs
  • 3 eggs
cake mix
  • 1 box Betty Crocker Gluten Free yellow cake mix
nuts
  • Chopped nuts (if desired) chopped nuts

Method
 

  1. Cream butter, add mashed bananas and eggs.
  2. Mix well, then add cake mix and nuts, and blend until smooth.
  3. Pour batter into a greased 9" x 5" loaf pan.
  4. Bake at 350°F (175°C) for 55-60 minutes until a toothpick inserted in the center comes out clean.
  5. Cover with foil if browning too quickly, then cool for 5 minutes before removing from pan.
  6. Cool on a wire rack before slicing.

Notes

Use ripe bananas for best flavor and moisture.
