  • 2 pieces ripe medium-sized bananas
  • 3 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • 1.5 cups almond flour
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup sugar-free chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mash bananas, then mix with eggs, almond milk, melted coconut oil, and vanilla.
  3. Whisk together almond flour, coconut flour, baking soda, baking powder, salt, and cinnamon.
  4. Combine dry and wet ingredients; fold in chocolate chips if using.
  5. Pour batter into pan, bake 45-55 minutes, cool before slicing.
