  • 6 medium apples Granny Smith or Honeycrisp recommended
  • 6 lollipop sticks or wooden skewers
  • 400 g granulated sugar
  • 120 ml light corn syrup or glucose syrup
  • 120 ml water
  • 0.5 tsp blue gel food coloring
  • Edible blue glitter optional
  • 1 tsp vanilla extract optional

Method
 

  1. Wash and completely dry apples. Insert sticks and place on parchment-lined baking sheet.
  2. Combine sugar, corn syrup, and water in a heavy-bottom saucepan over medium-high heat. Do not stir.
  3. Boil until the mixture reaches 150°C (300°F) using a candy thermometer.
  4. Remove from heat and stir in food coloring, vanilla extract (optional), and glitter.
  5. Tilt the pan and dip each apple, twirling for even coating. Let excess drip off.
  6. Place coated apples on the baking sheet, ensuring they don't touch.
  7. Sprinkle additional glitter while the coating is still sticky (optional).
  8. Cool completely before serving (30 minutes to an hour).

Use a candy thermometer for accurate temperature and perfect candy consistency.
