Dough
  • 1 cup active sourdough starter
  • 1 cup canned pumpkin puree
  • 2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 cup warm water
  • 1 tablespoon olive oil

Method
 

  1. Mix sourdough starter, pumpkin, and water until blended.
  2. Whisk dry ingredients; add to pumpkin mixture and stir into a sticky dough.
  3. Knead in olive oil for 5 minutes until smooth.
  4. Let dough rise in a warm place for 2 hours or until doubled.
  5. Shape into a loaf, place in a greased pan, and bake at 375°F (190°C) for 30-35 minutes.
