Batter
  • 1 cup mashed ripe bananas about 2 medium bananas
  • 1 cup canned pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
Cream Cheese Filling
  • 1/2 cup cream cheese softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract for cream cheese filling

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix bananas, pumpkin, sugars, oil, eggs, and vanilla until combined.
  3. Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Combine dry and wet ingredients; do not overmix.
  5. Beat cream cheese, powdered sugar, and vanilla until smooth.
  6. Fill muffin liners halfway with batter, add cream cheese, then top with more batter.
