Ingredients
  

Bananas
  • 3 pieces ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups all-purpose flour

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix mashed bananas with melted butter, then stir in baking soda and salt.
  3. Add sugar, beaten egg, vanilla, and cinnamon; mix until combined.
  4. Gradually fold in flour until just incorporated.
  5. Spoon batter into muffin cups about 2/3 full and bake for 18-20 minutes.
  6. Cool muffins briefly before transferring to a wire rack.

Notes

For extra flavor, sprinkle a little cinnamon on top before baking.
