Ingredients
  

Bananas
  • 3 pieces ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups all-purpose flour

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix mashed bananas with melted butter, then add baking soda and salt.
  3. Stir in sugar, beaten egg, vanilla, and cinnamon until combined.
  4. Gradually add flour and mix until just incorporated.
  5. Spoon batter into muffin cups about 2/3 full and bake for 18-20 minutes.
  6. Cool muffins briefly before transferring to a wire rack.

Notes

For extra flavor, sprinkle a little cinnamon on top before baking.
