  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
Wet ingredients
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
Optional
  • 1/2 cup chopped walnuts optional
Frosting
  • Cream cheese frosting for topping

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin with liners.
  2. Mix dry ingredients in a bowl; whisk together.
  3. Combine sugars and oil; add eggs one at a time, then stir in pumpkin and vanilla.
  4. Gradually mix in dry ingredients; fold in walnuts if using.
  5. Fill liners 2/3 full; bake 18-20 minutes; cool before frosting.
