Ingredients
  

Butter
  • 2 tablespoons butter
Vegetables
  • 1 yellow onion yellow onion (diced)
  • 10 cloves garlic (minced)
  • 1 lb carrots (peeled and diced)
  • 2 large russet potatoes (peeled and diced)
  • 32 oz vegetable broth
  • 2 cups finely diced broccoli florets
  • 8 oz yellow sharp cheddar cheese (freshly grated)
  • 2 cups milk
  • 2 tablespoons all purpose flour
Salt
  • to taste salt

Method
 

  1. Melt butter in a large pot and cook diced onion and minced garlic over medium-low heat until translucent.
  2. Add carrots and cook for 5 minutes, then add potatoes and vegetable broth. Bring to a boil and cook until potatoes are tender.
  3. Mix milk and flour, then add to the soup. Add broccoli and simmer for 10-15 minutes.
  4. Stir in grated cheese until melted and soup thickens. Season with salt to taste before serving.

Notes

For a creamier texture, blend part of the soup before adding cheese.
