Method
- Melt butter in a large pot and cook diced onion and minced garlic over medium-low heat until translucent.
- Add carrots and cook for 5 minutes, then add potatoes and vegetable broth. Bring to a boil and cook until potatoes are tender.
- Mix milk and flour, then add to the soup. Add broccoli and simmer for 10-15 minutes.
- Stir in grated cheese until melted and soup thickens. Season with salt to taste before serving.
Notes
For a creamier texture, blend part of the soup before adding cheese.
