Method
- Heat olive oil and cook chopped onion, garlic, and potato for 3 minutes.
- Add vegetable stock, mustard, and salt. Simmer for 2 minutes.
- Add milk and broccoli, cook for 10 minutes.
- Blend until smooth, then stir in grated cheddar.
- Serve hot, optionally topped with extra cheddar.
Notes
For a creamier texture, blend longer or add a splash of cream.
