Ingredients
  

Oil
  • 0.5 tbsp Olive oil
Broth
  • 800 ml Vegetable stock
Milk
  • 200 ml Skimmed milk
Vegetables
  • 1 piece Potato (peeled and chopped)
  • 1 piece Onion (chopped)
  • 2 cloves Garlic (crushed)
  • 1 head Broccoli (chopped)
Condiments and seasonings
  • 1 tsp Wholegrain mustard
  • 1 pinch Sea salt
  • 1 pinch Ground black pepper
Cheddar
  • 50 g Light mature cheddar (grated)

Method
 

  1. Heat olive oil and cook chopped onion, garlic, and potato for 3 minutes.
  2. Add vegetable stock, mustard, and salt. Simmer for 2 minutes.
  3. Add milk and broccoli, cook for 10 minutes.
  4. Blend until smooth, then stir in grated cheddar.
  5. Serve hot, optionally topped with extra cheddar.

Notes

For a creamier texture, blend longer or add a splash of cream.
