Creamy Broccoli Cheddar Soup

Ingredients
  

Dairy and fats
  • 1 tbsp butter
  • 0.25 cup butter
  • 2 cups half and half
Vegetables
  • 1 small onion, finely chopped
  • 3 cups chopped fresh broccoli
  • 1 cup shredded carrots
Seasonings
  • 1 tsp salt
  • 0.5 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp mustard (dry or prepared)
  • 0.25 tsp black pepper
Cheese
  • 2 cups shredded sharp cheddar cheese

Method
 

  1. Melt 1 tbsp butter in a large pot, sauté onion for 3–4 minutes.
  2. Add 1/4 cup butter and whisk in flour; cook for 1 minute.
  3. Gradually whisk in chicken broth and half and half; simmer until thickened.
  4. Add broccoli, carrots, salt, paprika, garlic powder, mustard, and pepper; cook for 10–15 minutes.
  5. Blend the soup until smooth or desired texture, then stir in cheese until melted.

Notes

For a creamier texture, blend more or less of the soup.
