Method
- Melt butter in a large pot over medium heat. Add diced onion and cook until soft, about 5 minutes.
- Add minced garlic and cook for 30 seconds until fragrant.
- Add broccoli and vegetable broth. Bring to a boil, then simmer for 15-20 minutes until tender.
- Puree the soup with an immersion blender until smooth, about 2-3 minutes.
- Stir in heavy cream and simmer for 5 minutes. Season with salt and pepper to taste.
Notes
Serve hot with crusty bread or crackers for a complete meal.
