Ingredients
  

Dairy
  • 2 tbsp butter real butter makes a difference
  • 1 cup diced onion about 1 cup when chopped
  • 1 clove garlic, minced fresh is worth it
Vegetables
  • 4 cups broccoli florets about 2 large heads
Broth
  • 4 cups vegetable broth good quality matters
Dairy
  • 1 cup heavy cream don’t substitute light cream
Seasonings
  • to taste salt and pepper be generous with seasoning

Method
 

  1. Melt butter in a large pot over medium heat. Add diced onion and cook until soft, about 5 minutes.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add broccoli and vegetable broth. Bring to a boil, then simmer for 15-20 minutes until tender.
  4. Puree the soup with an immersion blender until smooth, about 2-3 minutes.
  5. Stir in heavy cream and simmer for 5 minutes. Season with salt and pepper to taste.

Notes

Serve hot with crusty bread or crackers for a complete meal.
