Ingredients

  • 3 medium ripe bananas (mashed)
  • 2 large eggs
  • 120 ml melted butter or vegetable oil
  • 150 g brown sugar
  • 1 teaspoon pure vanilla extract
  • 200 g all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • ¼ teaspoon ground nutmeg (optional) for extra warmth
  • ¼ teaspoon salt
  • 100 ml milk or yogurt for extra moisture
  • 60 g chopped walnuts or pecans (optional) for crunch
  • 50 g mini chocolate chips (optional) for sweetness boost

Method
 

  1. Mash bananas until smooth with some small chunks.
  2. Mix melted butter, sugar, and vanilla until glossy.
  3. Add eggs one at a time, whisking well after each.
  4. Stir in milk or yogurt until batter is smooth.
  5. Combine dry ingredients and fold into wet batter; add nuts or chips if using.
  6. Pour into greased loaf pan and bake at 175°C (350°F) for 50-60 minutes; cool before slicing.

Notes

Ensure not to overmix to keep the bread tender.
