  • 3 medium ripe bananas (mashed)
  • 2 large eggs
  • 120 ml melted butter or vegetable oil
  • 150 g brown sugar
  • 1 teaspoon pure vanilla extract
  • 200 g all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • ¼ teaspoon ground nutmeg (optional) for extra warmth
  • ¼ teaspoon salt
  • 100 ml milk or yogurt for extra moisture
  • 60 g chopped walnuts or pecans (optional) for crunch
  • 50 g mini chocolate chips (optional) for sweetness boost

Method
 

  1. Mash bananas, then mix with melted butter, sugar, and vanilla until smooth.
  2. Add eggs one at a time, whisking well after each.
  3. Stir in milk or yogurt to create a smooth batter.
  4. Combine dry ingredients and fold into wet mixture gently.
  5. Fold in nuts or chocolate chips if using, then pour into prepared loaf pan.
  6. Bake at 175°C (350°F) for 50–60 minutes, cool before slicing.

Notes

Ensure not to overmix to keep the bread tender.
