Method
- Line a baking sheet with parchment paper.
- Rinse and dry strawberries. Remove tops and hull centers.
- Melt chocolate chips in microwave in 30-second intervals.
- Dip strawberries in chocolate and place on parchment paper. Prepare cheesecake filling.
- Combine cream cheese, powdered sugar, and vanilla. Add heavy cream and beat until fluffy. Chill for 15 minutes.
- Transfer filling to piping bag and pipe into strawberries.
- Refrigerate for 10-15 minutes to set filling if needed.
- Serve immediately or within 12 hours.
