Ingredients
  

Broth
  • 3 cups Beef Broth
Herbs and spices
  • 1 tsp Thyme, fresh
  • 3 tsp Garlic, minced
Vegetables
  • 2 tbsp Olive Oil
  • 1 tbsp Tomato Paste
  • 2 small Yellow Onions, diced
  • 1 head Cabbage, medium, chopped
  • 1 cup Tomatoes, diced
  • 3 stalks celery, sliced
  • 1 Red bell pepper, diced Red bell pepper
  • 1 yellow bell pepper, diced Yellow bell pepper
  • 1 orange bell pepper, diced Orange bell pepper

Method
 

  1. Heat olive oil in a large Dutch oven over medium heat.
  2. Sauté diced onions, bell peppers, celery, and garlic until tender.
  3. Add chopped cabbage, diced tomatoes, tomato paste, thyme, salt, and pepper. Stir to combine.
  4. Pour in beef broth and bring to a boil. Reduce heat and simmer for 15-20 minutes.
  5. Serve hot and enjoy!
