  • 1/2 cup unsalted butter
  • 1 cup mashed ripe bananas (about 2 medium bananas)
  • 1/2 cup pumpkin puree
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1.5 cups all-purpose flour
  • 1/2 cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Brown the butter in a saucepan until golden and nutty, then cool slightly.
  3. Mix browned butter, bananas, pumpkin, sugar, egg, and vanilla until smooth.
  4. Combine dry ingredients and gradually add to wet mixture, stirring until just combined.
  5. Fold in nuts if using, pour into pan, and bake for 60-70 minutes.
  6. Cool in pan for 10 minutes, then transfer to wire rack to cool completely.

Notes

For extra flavor, toast the nuts before folding them in.
