  • 1 tablespoon olive oil
Vegetables
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups cauliflower florets
Broth
  • 4 cups low-sodium vegetable or chicken broth
Dairy
  • 1 cup whole milk or heavy cream
Spices and Seasonings
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Cheese (Optional)
  • 1 cup shredded cheddar cheese optional
Garnish
  • Chopped fresh parsley for garnish

Method
 

  1. Heat butter and olive oil in a large pot, then sauté diced onion until softened.
  2. Add garlic, broccoli, and cauliflower; pour in broth and simmer until tender.
  3. Puree the soup until smooth using an immersion blender or blender.
  4. Stir in milk or cream, thyme, salt, pepper, and cheese if using; heat through.
  5. Ladle into bowls, garnish with parsley, and serve warm.

Notes

For a richer flavor, use heavy cream and add extra cheese.
