Bananas
  • 3 pieces ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 egg beaten egg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1.5 cups whole wheat flour
  • 1/2 cup chopped nuts or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line muffin tin.
  2. Mix mashed bananas with melted coconut oil.
  3. Add honey, vanilla, and egg; stir well.
  4. Mix in baking soda, salt, cinnamon, then fold in flour.
  5. Optional: fold in nuts or chocolate chips. Divide batter into muffin cups.
  6. Bake for 18-20 minutes; cool before serving.
