  • 8 tablespoons salted butter melted
  • 1/2 cup white sugar raw cane sugar preferred
  • 1/4 cup packed light brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1 1/2 cups all purpose flour 6.75 ounces
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt add a little extra
  • 3/4 cup chocolate chips combination of chips and chunks

Method
 

  1. Preheat oven to 350 degrees. Microwave butter until just melted.
  2. Beat butter and sugars until creamy. Add vanilla and egg; beat on low until just incorporated.
  3. Add flour, baking soda, and salt. Mix until crumbles form, then press into a dough. Add chocolate chips.
  4. Roll dough into balls and place on a cookie sheet. Bake for 9-11 minutes until puffy and barely golden. Do not overbake.
  5. Let cool on the pan for 30 minutes. They will sink down and become dense, buttery, soft cookies.

Notes

For extra soft cookies, be sure not to overbake them. They should still look slightly underdone when you take them out of the oven.
